The Encyclopedia of Fantasy by John Clute and John Grant
These two books covers just about everything there is to know about SF and fantasy.
Enc. of SF were published 1993, Enc. of Fantasy were published 1997, so they are pretty up to date.
You will most surely find many new authors you want to check out after browsing these books.
Highly recommended if you enjoy this genre.

Midnight in the Garden of Good and Evil by John Berendt

I stumbled onto this book at a sale-out. It is great and very descriptive, in the first fifty or so pages I found all the details a bit annoying, but after that I loved the book.
Havn't seen the movie, but I doubt it can make the book justice.

The Hitch-Hikers Guide to the Galaxy by Douglas Adams
science fiction/humourous
The first time I read this book was when I at the age of 15 or so were looking for humourous books. I doubt that I never enjoyed a book so much as the first part of this series. The humor is outrageous and it is impossible to avoid laughing out loud.
Imo, I find the first three books the best, but you'll surely enjoy all the five books. If you enjoy the books, try to pick-up the CDs with the radioshow, whatever they will cost, you won't regret getting them!

The Hotel by Jeffrey Robinson
non fiction
This is a very nice book, just about every chapter is about some amusing story that has taken place at a big hotel. There aren't any strong links to each chapter, so you can see the book as a short story collection, which make it a great companion for reading at the bus to/from work.

Ronan the Barbarian by James Bibby
fantasy/humourous
This is a parody of the famous Conan character. Humourous fantasy that is quite amusing, the end was a bit abrupt, this is the first book in a trilogy so you should probably pick up the other copies if you don't want to get disappointed.

Damned & Fancy by John Brosnan
fantasy/humourous
This is a bit like "Tom Sharpe goes fantasy". He writes very similar to the style of Tom Sharpe, and I'm not sure if I really enjoy that kind of humourour. If you do, and like fantasy, perhaps you should check it out.

Striptease by Carl Hiaasen
crime/humourous
A satiric crime-novel, I think you can call it. I liked it, it has a rather pink cover so perhaps it will ruin your bookshelves apparence :)
It was some time since I read the book and I can't be more specific about it. They made a movie out of it starring Demi Moore, havn't seen that one, though.
